I love making quesadillas. They are a definite quick win for busy women who are health and money-conscious. Quesadillas are so great because you can fill them with any veggies you have on hand (and meat, if you like). For this particular recipe, I use one of my favorite “go-to” seasonings, Lawhorn’s Signature Seasoning – a low sodium, all natural, MSG-free all purpose seasoning that makes this recipe prepartion quick and easy. I’m excited to share that Lawhorn’s is finally available in Walmart stores around the country!
After filling your tortillas, “seal” them with your favorite cheese and you have a delicious, inexpensive and nutritious meal in minutes!
Ingredients:
1 each whole wheat tortilla 12″
1/2 cup fresh mozzarella
1 cup fresh spinach leaves
1/4 cup roasted red peppers, chopped
1 teaspoon balsamic vinegar
1 teaspoon extra virgin olive oil
1 teaspoon garlic, minced
2 teaspoons black olives, diced
1 pinch black pepper
1 pinch red pepper flakes
1 pinch oregano
1 teaspoon Lawhorn’s Seasoning
Instructions:
In a cast iron skillet, heat olive oil over medium heat and add onions, garlic and black olives.
Saute for a couple minutes.
Next, add the spinach. Once the spinach has reduced significantly in size, add the roasted red peppers. Saute couple of minutes more.
Sprinkle veggie mixture with a pinch of the pepper, red pepper flakes, ground oregano and Lawhorn’s Seasoning.
Saute 30 more seconds.
Set aside the veggies.
In the same pan, place one tortilla. Top half of it with a generous portion of veggie mixture and cheese. Drizzle with a little balsamic vinegar.
Flip other half of tortilla over the veggies and cheese. It’s done when the cheese is completely melted and the tortilla is browned on both sides.
Option: Serve with Black Bean Hummus.
