Active moms have to juggle a lot of balls at one time. This time of year, youth fall and winter sports are gearing up for a long season. One more thing to add to our busy plate. My son’s football team started practice yesterday and it starts every evening at 5:45pm. That doesn’t leave a lot of time after work to pick up my son from camp, get dressed for practice, fill water bottles, walk the dog and…..find something light for everybody to eat.
Being short on time doesn’t automatically mean a trip through drive through. One of the main reasons people grab fast-food meals is convenience. Most people think it is because of cost, but often times cost is secondary. So the trick to eating healthy in a hurry is to prepare something simple but filling.
This evening my crew is munching on a Turkey and Fresh Summer Tomato Sandwich, green grapes and bottled water. And it took me less time to prepare than getting through any drive-thru between 5-7pm when the car lines are ridiculously long.
Turkey and Fresh Summer Tomato Sandwich
100% whole wheat bread
deli-style turkey (nitrate/nitrite free)
provolone cheese
fresh slicing tomato
dark leafy green (romaine, Bibb, spinach, arugula)
mustard
Prepare sandwiches to your liking. Pack your favorite cooler and head to the playing field!!
